Ingredients:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a KitchenAid Stand Mixer fitted with the paddle attachment, combine the peanut butter, sugar, egg, and vanilla extract
Mix on medium speed until well combined and smooth
Add the baking soda and salt to the mixture and mix until evenly incorporated
Using a cookie scoop or spoon, drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart
Gently press down on each cookie dough ball with a fork to create a crisscross pattern
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
