Menus and more menus!

Well, my first Halloween in the US in a very long time is over. We ended up not getting a pumpkin but using a ceramic one we had instead. Planned the candy pretty well. We ran out a tiny bit early, but I had a case of snack pack sized cracker jack on hand for the son, and some chips and we added those. By eight, we were back to normal.

I've finally sat down and figured what I'm going to do for some menus to use the food in my freezer up. It'll save some this month and let me make room for all the cookies I want to freeze and bake. I also add mac and cheese, soup and sandwich to the mix as well as one breakfast for dinner night. So with the menus below that should give me about two weeks of meals and more than one will be enough to freeze

We've already used a few things from the original list (pot pies, lamb chops), so here is my list, in order of kind of main dish, not as we will necessarily eat them. I haven't included my partial leg of lamb or eye of round roast, when I am in the mood on a Sunday I will cook one or the other. I seem to have an excessive amount of Italian style meals, but they are easy and they all even out. Most every meal has a salad, even if I forgot to add it, depending on what produce looked good at the time. I also plan to make a couple desserts, including a chocolate orange mouse experiment made with triple sec. We shall see.

Chicken Cacciatori (2 meals) with salad and garlic sticks

Chicken Ala King In pastry puffs (four breasts should make enough to freeze)

BBQ chicken thighs with biscuits and tomato salad. (enough for lunch next day)

Hamburgers and the fixings

Either Beef Kabobs done in the broiler with tomatoes onions and peppers , OR Ill cut them down a bit and make stroganoff with noodles, not sure yet).

French stew (mushrooms, wine and baby carrots to start) with crusty rolls (definitely a second or freezer meal)

Veal Scalloppini with pasta of choice and Salad

Rack of Lamb with Cous Cous and peas and tomatoes

Shrimp Pasta, with sides, haven't figured out how I will cook it

Beef Ravioli with marinara sauce, spinach, green salad.

Italian Pork chops with pasta, green vegetable

Salmon steaks in wine sauce with rice and homemade veggie mix.

Macaroni and Cheese, Broccoli, whatever salad is in the house.

veggie omelet with toast or popovers and fruit salad

Vegetable Soup and grilled cheese sandwiches

Your menus seem to have everything pretty much covered. Great job.
